Does freezing the beef affect the nutritional density as opposed to fresh beef?

No, freezing does not impact the nutritional density of the beef. Some of the other beef providers at the markets provide fresh meat because they buy products from other ranchers every week. We are producing our own meat, so it is more cost effective

What’s the best way to defrost it?

How long does frozen beef last?

Indefinitely according to food safety guidelines as long as you’re not defrosting it. Frozen meat will last for a very long time in the freezer, but for maximal freshness and best flavor/texture, we recommend using it within 1 year.

Do you wash your beef in citric acid or can this be avoided?

We cannot guarantee this. Our processors use an anti microbial intervention step that could be a variation of citric acid. Acetic acid, peracetic acid, citric acid are all sometimes used in meat processing.
