We air chill the birds, so no “baths” at any point in the processing
The birds are given a spritz of citric acid prior to the air chilling process, which kills whatever tiny amount of bad stuff might be on the carcass.
It takes a couple of hours to air chill the carcass, which allows the spritz to drip off
Key difference is the birds are not going into a bath and being exposed to any contamination between hundreds of birds. The birds are also not sitting in the nasty water/chemicals.
