Do the chickens go into a wet bath for chilling?Updated 8 months ago
No, our chickens are air chilled.
The birds are placed in a gigantic fridge until they are cooled down. Not touching, no bleach (aka chlorine), no extra fluid in the muscles.
Other benefits of air chilled: helps intensify flavor, keeps skin dry, saves thousands of gallons of water
Wet bath allow the processor to process thousand of chicken but at a huge cost:
Tank is fully chlorinated (i.e, bleach), which the chicken meat will absorb
All the birds are in the same tank and touching, potentially introducing pathogens to each other
Liquid (i.e., chlorine and any pathogens) from the tank ends up in the packaging with the chickens (that pink juice).
