What many people don’t know is that the femur bones that have marrow inside cut across are the cross-cut shank variation we offer. This way of butchering the bones with marrow, allows us to keep the incredible meat around the bone which makes for a great braised osso bucco preparation.
We’re also able to process a lot more cross-cut shank cuts when cut across versus the other way. A cow only has about 8 lbs of bones with marrow inside.
